Double or Triple Stroke on Text

We start with a blank canvas, and to this we can add a text layer:

Now let's open up the layer styles for the text layer and choose Stroke, Size 2 and Color White. We will not be able to see the stroke because we have the text on a White background. But click Ok to accept the settings. Now right-click the text layer and choose Duplicate. Open up the layer styles for the text layer on the bottom and change the Stroke to 4px Black. The effect extends past the layer on top and becomes visible:

We can then do this again for three strokes. Duplicate one of the layers and move the duplicate to the bottom. Edit the Stroke, increasing the size to at least 6px. Now we have three levels of strokes visible. Then we can modify the colors of each stroke to achieve different styles:

We can also switch it up by choosing the Gradient fill instead of Color. To do this, follow the steps above to create new text, but change the Fill Type of the stroke to Gradient. Also try adding a gradient overlay to the top layer and a drop shadow to the bottom layer to add extra effects to your text:

With the above layer styles applied to new layers, we have the following:
