Step 1:
Make a 400x250 pixels white Background new document, this is your design so you can really pick any size that you want; just remember that in Photoshop bigger is better.
Step 2:
Now select the Horizontal Type Tool in the menu...
Alright now type your text, we are using a nice dark brown for it (5a4929), and a big rounded font called "Cream And Sugar".

Step 3:
Now to select the text shape without rasterizing it, hold Ctrl and click the "T" icon of the Grass text layer, it's going to look like this:
Step 4:
Now press Shift + Ctrl + N (or Layer - New - Layer) to create a new layer and name it "Grass Text"
Step 5:
Select your Brush Tool on the tools menu...
Now go to the Brush Presets window...
And finally choose the Brush number 112.
Settings time, insert the right values to get the "Grass" brush, we have made ours and the grass is already looking awesome. Check how the thumbnail at the bottom changes while you are changing the settings.
Step 6:
Now you have to choose the two colors for your text, one for the Foreground and one for the Background.
We are using two nice greens, a dark one for the Foreground (007b06) and a light one for the Background (87e41b).
Step 7:
Now just paint the select text area, cool isn't it?
Step 8:
Okay, now Ctrl + D (deselect text).
Now we are going to paint the borders of the text, for this just turn down a little of the Master Diamter (size) of your brush, so we can now paint the borders.
Be very carefully and gentle with the borders, check the above image for reference:
Finally there you have your own Wild Grass Text, great uh? Changing the Foreground and Background color on Step 4 determinates the colors of the overall effect, so create your own combinations.
